Needless to say, SEGA was somehow displeased with our findings of Honey, so in the Gems Collection version, they trashed most of her data to bits, making her almost unplayable. Honey the Cat isn't actually a real character, and was cut from the final roster of Sonic the Fighters for unknown reasons. She was to be a joke character based on Honey from Fighting Vipers, the game of which SEGA decided to model StF after. Her design is also simply a Sonic-fied version of the same character. Since you can only use her fully in an emulator, however, there are a few details you cannot see, because MAME fails at 3D.

Arcade Version

We all know she exists in the Arcade version of StF, but since we obviously can't go and hack an arcade cabinet, we can't play as her here or see her model in full.

Honey is unique irregardless because her eyes do NOT face the opponent like they should. Instead, they face the camera, giving her a retarded look. When Eggman summons her to beat the shit out of her though, her eyes are suddenly fixed. Honey also has an alternate costume (of course, modeled after her Fighting Vipers one) unlike the other characters, whom only have grayscale clones.

It also appears that Honey and Amy Rose have some of the same animations. This was likely due to Honey being programmed into the game as a test fighter with some random character animations.
